There shouldn't be any problem visa-wise so long as you did the leaving formalities as requested and did not leave any debts behind (I am assuming you also left UAE when you left EY?)
As to the rest it would just depend on the timing, their requirements for crew and so forth. If they are actively recruiting, there's no harm to apply. Be prepared that they will ask what the reasons were for leaving, and they will ask if you are certain that will not be an issue any more. If you have a good enough explanation I don't see why that would disqualify you from the process. If they like you enough, they will hire you, just the same as anyone else.
At one point there was agreement between the two not to take crew, but as far as I knew this applied only to pilots.
I also know several who went EK>EY.
